Sally's Salsa Chicken

40 Minutes

INGREDIENTS:

4 skinless, boneless chicken breast

1 package of your favorite taco seasoning mix

1 cup of Sally’s Salsa (mild, medium or hot)

1 cup of shredded cheddar or Mexican Melting Cheese

Sour cream (optional)

Lime wedges (optional)

Sliced Jalapenos (optional)

 

DIRECTIONS:

1.Preheat oven to 375 degrees F (190 degrees C)

2.Using a zip-lock bag, toss the taco seasoning with the chicken breasts. In a 9x13 inch baking dish pour ¼ cup of Sally’s Salsa around the bottom. Place the chicken breasts in the 9x13 inch baking dish.

3.Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.

4.Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

 

Excellent served with red or black beans, Mexican rice, and Mexican style corn.

Sally's Tortilla Soup

30 Minutes

INGREDIENTS:

2 skinless, boneless chicken breasts, cut

into cubes

1/2 teaspoon olive oil

1/2 teaspoon minced garlic

1/4 teaspoon ground cumin

2 (14.5 ounce) cans chicken broth

1 cup frozen corn kernels

Optional toppings:

   Sour Cream

  Fresh chopped Cilantro

  Shredded Monterey Jack cheese

  Sliced Olives

  Cubed avocado

1 cup chopped onion

1/2 teaspoon chili powder

1 tablespoon lemon juice

1 cup Sally’s Salsa (mild, medium or hot)

4 corn tortillas cut into strips

1 can black beans, drained

DIRECTIONS:

1.In a large pot over medium heat, cook and stir chicken in the oil for 5 minutes. Add the garlic and cumin and mix well. Then add the broth, corn, onion, chili powder, lemon juice, and salsa. Reduce heat to low and simmer for about 20 to 30 minutes.

2.Place tortilla strips into individual bowls and pour soup over them. Add your favorite toppings and enjoy!

 

Sally's Meatloaf

1 Hour 10 Minutes

INGREDIENTS:

1 1/2 pounds ground beef

2 eggs

1/2 cup chopped onion

1/2 cup Italian bread crumbs

1/2 cup Sally’s Salsa (mild, medium or hot)

1/4 cup ketchup

1/4 cup your favorite barbeque sauce

1/2 teaspoon salt

1 teaspoon ground black pepper

1/2 teaspoon garlic salt

1 cup shredded cheddar cheese

 

DIRECTIONS:

1.Preheat an oven to 350 degrees F (175 degrees C).

2.In a medium sized mixing bowl, combine all of ingredients except the cheese; transfer to a loaf pan.

3.Bake in the preheated oven until golden brown on top, approximately 1 hour

4.Sprinkle the one cup of cheese on top and return to the oven until melted

5.Remove from oven and let sit for 8-10 minutes before cutting.
